Little Mini Peanut Butter Cups (No-Bake)

Little mini peanut butter cups. No bake and done mostly in the microwave! This recipe makes 5 dozen (!!) mini peanut butter cups in the standard miniature sized cupcake pan. You could half it easily if you wanted to.
Melt together 360g peanut butter and 56g butter until fluid. Stir in rice crisp until coated, then add in powdered sugar and mix in a stand mixer until completely combined. Using a small cookie scoop or spoon, place the peanut butter filling in mini cupcake liners within a mini cupcake pan. In a separate bowl, melt 430g chocolate and 113g butter until smooth. Top the peanut butter filling with the melted chocolate and a sprinkle of sea salt (optional). Allow to firm up either at room temperature or in the fridge if you're in a hurry.
