Melt in your mouth, bite sized pieces of chocolate bliss. These dark chocolate truffles are made with a creamy, dreamy ganache and rolled in colorful sprinkles, just for fun. They are a truly customizable confection, allowing you to finish them with cocoa powder, coconut, chopped nuts, or dipped in your favorite chocolate.

Instructions

1. Combine the cream and corn syrup in a saucepan. Bring to a boil.
2. Pour cream mixture over the chopped chocolate. Let it sit for 1 minute to allow chocolate to melt (don’t stir yet!)
3. Stir the mixture until it emulsifies.
4. Stir in the butter.
5. Pour ganache into a pan, covering the pan in a thin layer. Cover the ganache with a piece of plastic wrap directly on top.
6. Let the ganache cool undisturbed at room temperature. Let it sit until it is slightly firm. Do not put it in the fridge!
7. Form the ganache into 1” balls. This can be done with a cookie scoop, a spoon, or a piping bag.
8. Finish them off! Roll ganache truffles into sprinkles, nuts, or dip into chocolate. Be creative!
